Two things to do before the visit
Drain it. A full tub cannot be moved or cut safely, and the weight of the water is most of the problem. Drain it ahead of time and let the shell dry if the weather allows.
Have the power disconnected. Hot tubs are usually hard-wired to a dedicated circuit. That needs an electrician to disconnect at the panel before anyone cuts into the unit.

Why it gets cut up rather than lifted out
Most tubs went into the yard before the deck, the fence, or the landscaping did, and there is no longer a route big enough to take the shell out whole.
Cutting it down on the spot avoids taking a fence panel out or bringing equipment through the garden to lift it. It is why tubs on raised decks and in fully enclosed yards are still removable.
